Door de vaten te koelen in een temperatuurgecontroleerde kalkstenen kelder, werd de invloed van het klimaat op het rijpingsproces vermeden. Hierdoor werd de rijping vertraagd en de tannines, die de kenmerkende eikenhouten smaak veroorzaken, verminderd.
