Maxime Trijol produces two XO cognacs-this Grande Champagne XO is the family’s flagship in this category, distilled in small 2,500 litre stills from grapes grown only in the Grande Champagne region.

An Award-Winning XO Cognac Made Exclusively with Grapes from the Grande Champagne

Forming part of Maxime Trijol’s exclusive collection of cognacs crafted from the Premier Cru is the Maxime Trijol XO Grande Champagne Cognac. A slightly more masculine expression, this Extra Old Cognac has been matured for around 30 years on the Trijol 30-hectare estate. While it is a blend of eaux-de-vie of varying ages, the house of Maxime Trijol specializes in aging their Cognacs much longer than the minimum required for a typical XO. To this day, the family continues to oversee each step, and it’s thanks to this intimate relationship between maker and métier that the house delivers an XO Grande Champagne Cognac imbued with a lengthy finish. A special Cognac from an exceptional terroir, the calcareous and mineral-rich soils of this area make particularly expressive wines.

Ugni Blanc grapes from the Grande Champagne Premier Cru are crushed and pressed between September and October to make the Trijol XO Grande Champagne Cognac, and the juices are fermented without sulfur dioxide. The wine is then aged on the lees before being turned into Cognac via double distillation in accordance with AOC Cognac guidelines beginning March 31st. The Charente process, which involves double heating in the conventional pot still, is popular. The wine is then aged in Limousin French oak barrels
