Highwayman From Cove to Bay Single Malt Whisky
Released in 2024, Highwayman From Cove to Bay is a peated single malt whisky aged in 4 x 50-liter French oak ex-tawny refill casks that were sourced from a very well-known Tasmanian distillery before being aged with Seppeltsfield tawny for over a year. They were then filled, whilst still wet, with Highwayman peated signature spirit and left to age for a couple of weeks shy of 3 years, giving this whisky a huge amount of bursting flavor. It was bottled at cask strength.
Only 300 bottles were released.
Tasting Notes
Nose: Marzipan and nougat sweetness with subtle hints of hazelnut praline. Dark berries and fruits of the forest meet a soft earthy mustiness with a very subtle salty peat. Hints of milk chocolate are in the background.
Taste: Beautifully integrated oak spice meets a raspberry tartness mixed with an ashy fruit and nut milk chocolate. Hazelnut butter makes an appearance on the mid-palate, finishing with cinnamon-spiced blueberry crumble.
Finish: medium-long with subtle fruits and spices dancing with a soft, ashy, salty peat finish.
